Peace Love and Low Carb has a must try recipe.  The ingredients are wonderful, chicken, bacon, cream cheese, did I mention bacon?  And it’s a crock pot recipe, so it’s set it and forget it!  What’s not to love?  You have to check this out.

Coconut Macaroon Cookies

I adore coconut macaroons, they’re so simple to make and so good.  I made George Stella’s recipe, and they were very good, not the first day, they needed to age to moisten, the second day they were moist, but a little firm.  So I’m remaking them, this time doubling the butter and lightly toasting the coconut in the butter first,  then adding  2-3 tablespoons of whipping cream to thin the batter.  I’m also going to make them next week using 1-1/2 teaspoons of almond flavoring and 1-1/2 teaspoons of vanilla and some chopped almonds that I toast along with the butter to the batter.  And I may take half of a batch and fold in some raspberries to see how that works.  Oh, the possibilities...

Here’s George’s recipe with my revisions...

 

3 egg whites

1 Tablespoon vanilla extract

1⁄2 cup Splenda

2 tablespoon butters, melted

1⁄2 teaspoon baking soda

11⁄2 packed cups unsweetened shredded coconut

2-3 Tablespoons Whipping Cream    

 

1. Place oven rack in the center position and preheat to 350 degrees. Line a baking sheet with parchment paper.

 

2. In a large bowl, beat egg whites and vanilla extract until frothy. Stir in sugar substitute, butter, and baking soda.

 

3. Fold coconut into the wet ingredients until well combined.??4. Wet fingers to prevent sticking; form the mixture into 16 equal balls about 4 teaspoons in size, and place on the lined baking sheet.

 

5. Bake for 15 minutes or until they begin to turn golden brown all over. Let cool 15 minutes before serving

 

George’s Tips | Pack the dough into a 1 ounce ice cream scoop to form perfectly circular macaroons. You can also bake them in paper mini muffin liners for a really nice presentation.??calories: 125| fat: 11g|protein: 2.5g |fiber: 2g |net carbs:2.5g.

Macadamia Coconut Lime Muffins

Carolyn over at All Day I Dream About Food has done it again with another yummy sounding recipe.  I don’t have whey protein powder, but I’m thinking I need to get it!  ASAP!!!  I will probably make these with coconut flour instead of ground macadamia nuts, as that could get really pricey.

Delicious Low Carb Waffles

These are excellent waffles.  I made them in my Belgian Waffle Iron this snowy morning, added butter and Mrs. Butterworth’s Sugar Free Syrup, a couple of sausage links, and it was so good, definitely going into my keeper file.

1 cup almond flour
2 lightly beaten eggs
1 teaspoon Splenda
1 teaspoon baking powder
1/2 teaspoon vanilla extract
enough half and half to make a thick batter

I  mixed all together, then stirred in half and half, I didn’t measure, I’m guessing between 1/8-1/4 cup, just stir in enough to make a thick pancake batter consistency.

This made 4 Belgian Waffles, they cooked very quickly in my waffle iron, they were done in 2-3 minutes.

Our family is a huge fan of Starbucks Cranberry Bliss Bars, and we make our own version with great success.  So, when I found this low carb version you can imagine how excited I am.  Definitely on my Christmas list this year, maybe even before.  ~ Jan

25 Calorie, 2 Carb Hot Chocolate Mix - heart be STILL!  Maria at Healthy Living How To posted this and it’s ringing my chimes, I’m making it this morning!!!!

Here’s the recipe - this is about as good as it gets.  If you want to add a few more calories and add to the richness, pour in a splash of cream!

Note:  I just made this and it’s wonderful.  Be sure and level that teaspoon of salt, and if you’re salt sensitive, you might want to use a scant teaspoon, as you can taste it, but that’s what makes it good.  The he salt keeps it from tasting flat.

Use Silk Unsweetened Almond Milk if you can find it.  I tried Blue Diamond Unsweetened Almond milk, a huge thumbs down, The Silk is so much better.  A splash of half and half really does add richness and adds very few calories.   You will love this, pinkie swear you will.  ~ Jan
